Single variety Cox apple, naturally fermented, bottled in Champagne bottles prior to the completion  of primary fermentation,  leaving sugar and yeast to continue working in the bottle.  Bottles are racked, champagne style, then disgorged to remove much of the sediment.
A medium dry, sparkling cider, with crisp appley taste.
